Ingredients

  • 1 1/2 cups  all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cups white sugar
  • 1 cup  sweet apple, peeled and roughly chopped (approximately 1 large)
  • 1 cup tart apple, peeled and roughly chopped (approximately 1 large)
  • 2 large eggs
  • 1 teaspoon vanilla bean paste (or equal amount vanilla extract)
  • 1/2 cup vegetable oil
  • 1/2 cup Greek yogurt

For cinnamon topping

  • 1 teaspoon cinnamon
  • 1/4 cup  white sugar
  • 1 tablespoon  unsalted butter, melted

For the glaze

  • 1/4 cup powdered sugar
  • 1-2 Tablespoons tablespoons milk

Instructions

  • Preheat oven to 350ºF. Grease and line a 9-inch round cake pan with parchment paper.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, and sugar. Add the chopped apple and stir to combine.
  • In a separate smaller bowl, whisk eggs, vanilla, oil and yogurt briefly just to break up the egg yolks.
  • Add the wet ingredients to the dry ingredients and gently mix with a wooden spoon until combined. Be careful not to over mix. Spoon batter into prepared cake pan.
  • To make the cinnamon topping, combine cinnamon, sugar, and butter. Mix together with a fork until lumpy and wet. Sprinkle over cake batter.
  • Bake cake for approximately 30-35 minutes or until a toothpick inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.
  • To make the glaze, mix together powdered sugar and 1 tablespoon of milk. Stir until smooth. If the glaze is too thick, add an extra tablespoon of milk. Drizzle glaze over the cooled cake.
